Ingredients

  • 2 cups all-purpose flour
  • ¾ cup warm water
  • 2.25 tsp instant yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 3 tbsp baking soda
  • 2 tbsp butter, melted
  • 1 tbsp coarse pretzel salt or sea salt

    Mix warm water, yeast, and sugar in a bowl. Let sit 5 minutes until foamy.

    Add flour and salt to yeast mixture. Stir until a shaggy dough forms.

    Knead dough on a lightly floured surface for 5 minutes until smooth.

    Let dough rest in a covered bowl for 20 minutes until visibly puffy.

    Divide dough into 16 equal pieces. Roll each into a 6-inch rope.

    Bring a large pot of water to a boil. Stir in baking soda — water will foam.

    Boil pretzel ropes 30 seconds each, then transfer to a parchment-lined baking sheet.

    Preheat oven to 425°F. Brush boiled pretzels with melted butter and sprinkle salt.
