Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 can (14.5 oz) canned diced tomatoes with green chiles
- 2 cans (15 oz each) canned kidney beans, drained and rinsed
- 3 whole peppers plus 2 tbsp sauce chipotle peppers in adobo sauce
- 1 medium yellow onion, diced
- 1 whole lime
- 1 cup chicken broth

Dice chicken into 1-inch chunks. Finely chop the 3 chipotle peppers.

Heat olive oil in a large pot over medium-high. Add onion and cook, stirring often, until softened, about 4 minutes.

Add diced chicken and cook, stirring, until no pink remains on the surface, about 5 minutes.

Stir in chopped chipotles, adobo sauce, diced tomatoes with chiles, beans, and broth. Bring to a simmer.
