Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (14.5 oz) canned diced tomatoes with green chiles
  • 2 cans (15 oz each) canned kidney beans, drained and rinsed
  • 3 whole peppers plus 2 tbsp sauce chipotle peppers in adobo sauce
  • 1 medium yellow onion, diced
  • 1 whole lime
  • 1 cup chicken broth

Instructions

    Dice chicken into 1-inch chunks. Finely chop the 3 chipotle peppers.

    Heat olive oil in a large pot over medium-high. Add onion and cook, stirring often, until softened, about 4 minutes.

    Add diced chicken and cook, stirring, until no pink remains on the surface, about 5 minutes.

    Stir in chopped chipotles, adobo sauce, diced tomatoes with chiles, beans, and broth. Bring to a simmer.

    Simmer uncovered for 8 minutes until flavors meld and chicken is fully cooked through.

    Squeeze lime juice over the pot, stir, and taste. Season with salt and pepper. Serve hot.
