Ingredients
- 2 whole croissants
- 4 oz smoked salmon
- ¼ small red onion
- 1 tbsp capers
- 2 whole lettuce leaves
- ½ whole lemon

Slice the 2 croissants in half horizontally, leaving them hinged. If they are not already crisp, toast them cut-side up in a dry skillet over medium heat until lightly golden, about 2 minutes.

Thinly slice the 1/4 small red onion into rings. Rinse and pat dry the 2 lettuce leaves.

Layer the bottom halves of the croissants with the lettuce, 4 oz smoked salmon, red onion rings, and 1 tbsp capers.
