Ingredients

  • 2 whole croissants
  • 4 oz smoked salmon
  • ¼ small red onion
  • 1 tbsp capers
  • 2 whole lettuce leaves
  • ½ whole lemon

Instructions

  1. 1

Slice the 2 croissants in half horizontally, leaving them hinged. If they are not already crisp, toast them cut-side up in a dry skillet over medium heat until lightly golden, about 2 minutes.

  2. 2

Thinly slice the 1/4 small red onion into rings. Rinse and pat dry the 2 lettuce leaves.

  3. 3

Layer the bottom halves of the croissants with the lettuce, 4 oz smoked salmon, red onion rings, and 1 tbsp capers.

  4. 4

Squeeze the juice of the 1/2 lemon over the filling, then close the sandwiches with the top halves. Serve immediately.
