  • 4 oz cream cheese, softened
  • 6 oz smoked salmon
  • 4 whole eggs
  • 1.5 cups fresh fruit (berries, melon, or apple)
  • 2 whole croissants (store-bought)
  • 1 tbsp fresh dill or chives (chopped)
  • 1 whole lemon (zested + wedges)

Instructions

    Slice and toast the bagels until golden and crispy inside.

    Whisk eggs with a pinch of salt and pepper. Heat butter in a skillet over medium and scramble until soft curds form, ~3 minutes.

    Spread cream cheese on each warm bagel half. Layer smoked salmon on top, then sprinkle with dill, lemon zest, and a crack of pepper.
