Ingredients

  • 4 pieces chicken breasts or thighs (skin-on, bone-in preferred)
  • 2 whole medium russet potatoes
  • 1 tbsp smoked paprika
  • 1 tbsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp black pepper

Instructions

    Prick potatoes 4–5 times with a fork. Wrap each tightly in foil. Set on grill grates.

    Mix smoked paprika, brown sugar, garlic powder, black pepper, salt, and oil in a small bowl.

    Pat chicken dry. Rub the spice mixture all over skin and flesh. Let sit 2 minutes.

    Heat grill to medium-high. Place chicken skin-side down on oiled grates; do not move for 5 minutes.

    Flip chicken. Cook 5–6 minutes more until skin crisps and internal temp reaches 165°F.
