Ingredients

  • 3.5 cups all-purpose flour
  • 2.25 teaspoons active dry yeast
  • 1 cup warm milk
  • ½ cup granulated sugar
  • ¼ cup butter
  • 2 large eggs
  • ½ teaspoon salt
  • 4 cups vegetable oil

Instructions

    In a small bowl, dissolve the 2.25 tsp yeast and 1 tbsp of the sugar in the 1 cup warm milk. Let sit until foamy, about 5-10 minutes.

    In a large bowl, combine the 3.5 cups flour, remaining sugar, and 0.5 tsp salt. Cut in the 0.25 cup butter until crumbly.

    Add the yeast mixture and 2 eggs to the flour mixture. Stir until a soft dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic.

    Place dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 1-1.5 hours.

    Punch down dough, roll to 1/2 inch thickness, and cut out circles. Use a smaller cutter to make eyes and a smile, or shape by hand. Let rise again for 30 minutes.

    Heat the 4 cups oil in a deep pot to 350°F. Fry donuts in batches, 1-2 minutes per side, until golden brown. Drain on paper towels.

    While still warm, toss donuts in sugar to coat. Serve fresh.
