Ingredients

  • 2 breasts (about 6 oz each) boneless, skinless chicken breasts
  • 2 medium red chili peppers, seeded
  • 3 cloves garlic cloves
  • ½ lime lime (juiced)
  • 1.5 cups cooked white rice
  • 1 medium cucumber, sliced

Instructions

  1. 1

Pound each chicken breast between plastic wrap until 1/2 inch thick. Season generously with salt and pepper.

  2. 2

Mince the chili peppers and garlic together, then stir in lime juice and a pinch of salt. Set the sambal paste aside.

  3. 3

Heat oil in a 12-inch skillet over medium-high until shimmering, about 1 minute.

  4. 4

Add chicken and cook 6-7 minutes per side without moving until golden brown and cooked through.

  5. 5

Transfer chicken to a plate and immediately smash with the back of a spoon or fork. Spoon sambal paste over the top.

  6. 6

Serve the smashed chicken alongside warm rice and fresh cucumber slices.
