Ingredients
- 2 breasts (about 6 oz each) boneless, skinless chicken breasts
- 2 medium red chili peppers, seeded
- 3 cloves garlic cloves
- ½ lime lime (juiced)
- 1.5 cups cooked white rice
- 1 medium cucumber, sliced

Pound each chicken breast between plastic wrap until 1/2 inch thick. Season generously with salt and pepper.

Mince the chili peppers and garlic together, then stir in lime juice and a pinch of salt. Set the sambal paste aside.

Heat oil in a 12-inch skillet over medium-high until shimmering, about 1 minute.

Add chicken and cook 6-7 minutes per side without moving until golden brown and cooked through.

Transfer chicken to a plate and immediately smash with the back of a spoon or fork. Spoon sambal paste over the top.
