Ingredients

  • 1 can (15 oz) canned chickpeas, drained and rinsed
  • ¼ medium red onion, minced
  • 1 whole lemon (zested + juiced)
  • 3 tbsp fresh herbs (parsley, dill, or chives, chopped)
  • 2 slices or 1 pita bread (crusty, pita, or ciabatta)
  • 1 handful lettuce and tomato for serving

Instructions

    Mash chickpeas in a bowl with a fork until mostly broken down but still chunky.

    Stir in red onion, lemon juice, lemon zest, and fresh herbs. Taste and season with salt and pepper.

    Toast bread lightly until edges are golden and surface feels crisp.

    Spread chickpea mixture on one slice of bread, top with lettuce and tomato, then cover with the second slice.
