Ingredients

  • 1 large ripe avocados
  • 2 large eggs
  • 2 slices bread (sourdough or whole grain)
  • 1 medium tomato, ripe
  • ½ whole lemon
  • 1 pinch red pepper flakes or hot sauce

Instructions

    Toast the bread until golden and crispy, about 2 minutes per side in a toaster or skillet.

    Heat oil in a skillet over medium-high until it shimmers, about 60 seconds.

    Crack eggs into the skillet without stirring. Cook until whites set but yolks jiggle, 3–4 minutes.

    While eggs cook, halve the avocado, scoop into a bowl, and mash with a fork until chunky.

    Squeeze lemon juice over the mashed avocado, add a pinch of salt and pepper, and stir.
