Ingredients

  • 2 slices bread slices (sourdough or whole grain)
  • 1 whole ripe avocado
  • 2 whole eggs
  • ½ whole cucumber
  • 1.5 cups mixed salad greens
  • ½ whole lemon
  • ¼ tsp red pepper flakes (optional)
  • 2 cups herbal tea with orange slices

Instructions

    Toast bread until golden and crispy on both sides, about 2 minutes per side.

    Heat oil in a skillet over medium heat. Crack eggs into the pan and fry until whites set but yolks still jiggle, 3-4 minutes.

    Halve the avocado, scoop flesh into a bowl, and mash with a fork until chunky. Season with salt, pepper, and lemon juice.

    Slice cucumber into 1/4-inch rounds. Toss greens with a pinch of salt and a squeeze of lemon juice.

    Spread mashed avocado on toasted bread and top each slice with a fried egg.
