Ingredients

  • 2 whole croissants, split
  • 1 whole avocado, ripe
  • 2 whole eggs
  • 4 oz smoked salmon
  • ½ whole lemon
  • 1 tbsp butter

Instructions

    Halve the avocado, remove the pit, and scoop into a small bowl. Mash with a fork until chunky-creamy, then season with salt, pepper, and a squeeze of lemon juice.

    Warm a skillet over medium-high heat. Add butter and let it foam, about 1 minute.

    Crack both eggs into the skillet. Cook until whites are set but yolks still jiggle, about 3–4 minutes.

    While eggs cook, toast the croissant halves in a separate skillet or toaster until golden and warm.

    Spread smashed avocado on each croissant half, then top with a fried egg and a drape of smoked salmon.

    Squeeze fresh lemon over the top and serve immediately.
