Ingredients
- 2 whole croissants, split
- 1 whole avocado, ripe
- 2 whole eggs
- 4 oz smoked salmon
- ½ whole lemon
- 1 tbsp butter

Halve the avocado, remove the pit, and scoop into a small bowl. Mash with a fork until chunky-creamy, then season with salt, pepper, and a squeeze of lemon juice.

Warm a skillet over medium-high heat. Add butter and let it foam, about 1 minute.

Crack both eggs into the skillet. Cook until whites are set but yolks still jiggle, about 3–4 minutes.
