Ingredients

  • 8 oz cooked chicken breast
  • 1 whole ripe avocado
  • ½ whole lime
  • 2 tbsp red onion
  • 2 tbsp fresh cilantro
  • 4 slices bread (sourdough or whole wheat)
  • 1 cup green leaf lettuce or arugula

Instructions

    Shred the cooked chicken into bite-sized pieces with two forks.

    Cut the avocado in half, scoop into a bowl, and mash coarsely with a fork.

    Fold the shredded chicken, diced red onion, and chopped cilantro into the mashed avocado.

    Squeeze lime juice over the mixture. Season with salt and pepper to taste.

    Toast the bread slices until golden and crisp, about 2 minutes per side.

    Divide lettuce between two slices of toasted bread, then spread the avocado-chicken mixture on top.
