Smash Tacos
Crispy-edged ground beef patties smashed flat in a hot skillet, topped with melted cheese and piled into warm tortillas. Ready in 20 minutes.

Ingredients
- 1 lb ground beef
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup cheddar cheese, shredded
- 8 count corn tortillas
- ½ count onion, diced
- 1 count jalapeño, sliced
- 1 tbsp olive oil

Heat oil in a 12-inch cast iron skillet over medium-high until it shimmers, about 1 minute.

Divide beef into 8 portions and loosely form into balls. Do not pack.

Place one beef ball in the skillet and immediately smash flat with a spatula using firm pressure.

Season the patty with a pinch of salt and pepper. Cook 2 minutes without moving.

Flip and cook 1 minute on the reverse side. Top with 2 tbsp cheese and cover with a lid for 30 seconds.

Slide patty onto a warm tortilla. Repeat with remaining beef portions.

Top each taco with diced onion and jalapeño slices. Serve immediately.
