Ingredients
- 1.5 lb steak (such as sirloin or flank)
- 1 large onion
- 2 medium tomatoes
- 2 stalks green onions
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Pat the 1.5 lb steak dry with paper towels and season both sides with the 1 tsp salt and 0.5 tsp black pepper. Let it sit at room temperature for 10 minutes.

Heat 1 tbsp of the olive oil in a large skillet over medium-high heat. Add the steak and cook until browned and cooked to your liking, about 4-5 minutes per side for medium-rare. Transfer to a plate and let rest.

Reduce heat to medium and add the remaining 1 tbsp olive oil. Add the 1 large onion, sliced, and cook, stirring occasionally, until soft and golden, about 8 minutes.

Add the 2 medium tomatoes, chopped, to the skillet and cook until they start to soften, about 2-3 minutes. Season with a pinch of salt and pepper.

Slice the rested steak thinly against the grain. Return the sliced steak to the skillet with the onions and tomatoes, and toss to combine and warm through, about 1-2 minutes.
