Ingredients

  • 1.5 lbs pork shoulder, boneless
  • 1 tbsp liquid smoke
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 2 tbsp white vinegar

Instructions

    Cut pork into 2-inch chunks, removing any excess fat.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Brown pork in batches without stirring for 2 minutes per side until edges are golden. Set aside.

    Stir ginger and garlic into the same pan for 30 seconds until fragrant.

    Add soy sauce, brown sugar, liquid smoke, and vinegar. Return pork and stir to coat.

    Reduce heat to medium-low and simmer 10 minutes, stirring occasionally, until pork shreds easily and sauce reduces to a glaze.
