Ingredients
- 1 lb beef sirloin or ribeye, cut into thin strips
- 2 medium bell peppers (red, yellow, or green), sliced into thin strips
- 1 medium yellow onion, sliced into thin strips
- 1 tbsp chili powder
- 1 whole lime
- 8 whole flour or corn tortillas
- ¼ cup fresh cilantro, chopped (optional)

Pat beef dry with paper towels. Season generously with salt, pepper, and half the chili powder.

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Sear beef 2 minutes per side without moving. Transfer to a plate; set aside.

Add peppers and onion to the pan with remaining chili powder. Sauté until soft and lightly charred, 6–8 minutes.

Return beef to the pan, toss with vegetables, and squeeze lime juice over everything.

Warm tortillas in a dry skillet, 30 seconds per side. Serve fajitas with cilantro and lime wedges.
