Ingredients
- 1.5 lb beef sirloin
- ½ cup plain yogurt
- 2 cloves garlic
- 1 tsp ground cumin
- 1 cup fresh cilantro
- 1 whole lemon
- 1 medium onion
- 1 tsp salt

Cut the 1.5 lb beef sirloin into 1-inch cubes. In a bowl, mix the beef with 0.5 cup yogurt, 2 minced garlic cloves, 1 tsp ground cumin, and 0.5 tsp salt. Let marinate for 15 minutes.

While the meat marinates, make the chutney: blend 1 cup cilantro (stems and leaves), juice of 1 lemon, 0.5 tsp salt, and 2 tbsp water until smooth. Set aside.

Thread the marinated beef onto skewers, pressing cubes together snugly. Slice the 1 medium onion into thick rings.

Preheat a grill or grill pan over high heat. Grill the skewers for 8-10 minutes, turning every 2-3 minutes, until charred on the outside and medium-rare inside (internal temperature 135°F).

Grill the onion rings for 2-3 minutes per side until softened and lightly charred.

Rest the skewers for 5 minutes. Serve with the green chutney, grilled onions, and extra lemon wedges if desired.
