Ingredients
- 2 medium bell peppers (1 red, 1 yellow), sliced into 1/4-inch strips
- 1 medium yellow onion, sliced into 1/4-inch strips
- 1 medium zucchini, sliced into 1/4-inch half-moons
- 3 tbsp olive oil
- 1.5 tsp chili powder
- 4 count flour tortillas (6-inch)
- 1 count lime (halved)

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Add peppers, onion, and zucchini. Sprinkle chili powder, salt, and pepper over top.

Sauté without stirring for 2 minutes until edges char, then stir and cook 3 more minutes until tender-crisp and lightly blackened.

Warm tortillas directly over a gas flame (or in the skillet edges) for 15 seconds per side until pliable.

Divide veggies among tortillas. Squeeze lime juice over each and serve immediately.
