Ingredients

  • 1.5 lbs Chicken breasts
  • 3 tbsp Lime juice
  • 3 tbsp Olive oil
  • 3 cloves Garlic cloves, minced
  • 1.5 tsp Cumin
  • 1 tsp Chili powder
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 2 large Bell peppers, sliced
  • 1 medium Yellow onion, sliced
  • 1 tbsp Olive oil
  • 8 count Flour tortillas
  • ½ cup Sour cream
  • 1 cup Guacamole
  • 1 cup Salsa
  • ¾ cup Shredded cheddar cheese
  • ¼ cup Fresh cilantro
  • 2 count Lime wedges

Instructions

    Slice chicken breasts into 0.5-inch thick strips.

    In a bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper.

    Add chicken strips to marinade and toss to coat evenly. Let sit for 10 minutes.

    Slice bell peppers into strips, removing seeds and membranes. Slice onion into thin strips.

    Heat 12-inch cast iron skillet over medium-high heat until very hot.

    Add chicken strips with marinade to skillet and cook for 4-5 minutes per side until cooked through. Transfer to a plate.

    Add 1 tbsp olive oil to same skillet. Stir-fry peppers and onions for 5-6 minutes until tender-crisp.

    Return chicken to skillet and toss with vegetables for 1 minute.

    Warm tortillas in a separate skillet or over a gas flame for 30 seconds per side.

    Transfer chicken and vegetable mixture to a serving platter, keeping warm.

    Arrange tortillas, sour cream, guacamole, salsa, cheese, cilantro, and lime wedges on table.
