Ingredients

  • ½ cup tahini (sesame paste)
  • 4 cloves garlic cloves
  • 1 whole lemon (juiced)
  • ¼ cup ice water
  • ½ tsp salt
  • 2 tbsp olive oil

Instructions

    Mince garlic finely. Whisk tahini and lemon juice together in a bowl until combined.

    Add garlic and salt. Whisk vigorously for 30 seconds until the mixture lightens and becomes slightly thick.

    Drizzle ice water in slowly while whisking constantly. The sauce will seize, then suddenly turn silky and pale.
