Ingredients

  • 6 oz dark chocolate (60–70% cacao)
  • 1 cup heavy cream
  • 2 whole large eggs, separated
  • 2 tbsp sugar
  • ½ tsp vanilla extract

Instructions

    Chop chocolate into small pieces. Heat cream over medium until it just begins to steam, ~2 minutes.

    Pour hot cream over chocolate. Let sit 30 seconds, then stir until smooth and glossy.

    Set chocolate mixture aside to cool to room temperature, ~5 minutes. Stir occasionally.

    Whip egg whites with sugar until stiff peaks form—tips should stand straight up, ~3 minutes.

    Fold vanilla and cooled chocolate into egg whites in two additions until no streaks remain.
