Ingredients
- 8 sheets phyllo dough (thawed if frozen)
- 1 cup feta cheese, crumbled
- ½ medium onion, finely diced
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- ¼ tsp black pepper
- ½ cup olive oil
- 1 pinch salt to taste

Mix feta, diced onion, parsley, dill, and black pepper in a bowl until combined.

Lay one phyllo sheet on a work surface. Cover remaining sheets with a damp towel.

Spoon 2 tbsp filling along the bottom edge of the phyllo sheet, leaving 1 inch from edges.

Fold the left and right edges inward, then roll tightly from bottom to top into a cigar shape.

Repeat with remaining phyllo sheets and filling to make 8 rolls total.

Heat olive oil in a 12-inch skillet over medium-high heat until it shimmers, ~2 minutes.

Working in batches, fry rolls seam-side down 2–3 minutes until golden, then flip and fry 90 seconds more.
