Shrimp Wonton Soup

Ingredients

  • ½ lb shrimp, peeled and deveined
  • 20 pieces wonton wrappers
  • 6 cups chicken or vegetable broth
  • 2 tbsp ginger, peeled and sliced thin
  • 3 cloves garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 stalks green onions, sliced
  • 1 pinch salt and white pepper to taste

Instructions

    Chop shrimp into small pieces, about 1/4-inch chunks. Set aside.

    Place shrimp, 1 tsp soy sauce, and a pinch of salt in a bowl. Stir to coat.

    Fill a small bowl with water. Place a wonton wrapper flat on your work surface.

    Spoon 1 tsp shrimp mixture into the center of the wrapper. Dip your finger in water and trace the edges.

    Fold the wrapper in half diagonally to form a triangle, pressing edges to seal.

    Bring the two corner points of the triangle together and press to seal into a wonton shape. Repeat with remaining wrappers.

    Bring broth to a boil in a large pot over high heat, about 5 minutes.

    Add ginger slices and minced garlic. Simmer for 2 minutes until fragrant.

    Add wontons one at a time, stirring gently to prevent sticking. Simmer until they float, about 4 minutes.

    Stir in remaining 1 tbsp soy sauce and sesame oil.

    Taste and adjust with salt and white pepper.

    Ladle soup into bowls and garnish with green onion slices. Serve hot.
