Shrimp Sushi

Ingredients

  • 1 cup sushi rice
  • 1.25 cups water
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ lb shrimp, peeled and deveined
  • 1 tsp wasabi paste
  • 2 tbsp pickled ginger

Instructions

    Rinse the 1 cup sushi rice in cold water until the water runs clear. Combine with 1.25 cups water in a saucepan and bring to a boil.

    Reduce heat to low, cover, and simmer until the water is absorbed and rice is tender, about 15 minutes. Remove from heat and let stand, covered, for 10 minutes.

    In a small bowl, mix 2 tbsp rice vinegar, 1 tsp sugar, and 0.5 tsp salt until dissolved. Fold this into the warm rice, then let it cool to room temperature.

    Bring a small pot of water to a boil. Add the 0.5 lb shrimp and cook until pink and opaque, about 2-3 minutes. Drain and let cool, then slice each shrimp in half lengthwise.

    Wet your hands with water to prevent sticking. Take a small handful of rice and shape it into an oval about 2 inches long.

    Top each rice oval with a slice of shrimp. Serve with a dab of wasabi and pickled ginger on the side.

    Enjoy immediately, or refrigerate for up to 2 hours before serving.
