Ingredients
- 8 oz udon noodles
- ½ lb shrimp, peeled and deveined
- 4 oz green beans, trimmed
- 1 red bell pepper, sliced
- 2 tbsp soy sauce
- 1 tbsp chili oil

Cook the 8 oz udon noodles according to package directions until just tender, about 5 minutes. Drain and set aside.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the 0.5 lb shrimp and cook until pink and opaque, about 2 minutes per side. Remove and set aside.

In the same skillet, add the 4 oz green beans and 1 sliced red bell pepper. Stir-fry until crisp-tender, about 4 minutes.

Return the shrimp and noodles to the skillet. Add the 2 tbsp soy sauce and 1 tbsp chili oil. Toss everything together until well coated and heated through, about 2 minutes. Serve hot.
