Ingredients

  • ½ lb shrimp, peeled and deveined
  • 1 avocado
  • 2 bread slices
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh parsley, chopped

    Pat the 0.5 lb shrimp dry with paper towels and season with 0.25 tsp salt and a pinch of the black pepper.

    Heat 1 tbsp olive oil in a skillet over medium-high. Add the shrimp in a single layer and cook until pink and opaque, about 2-3 minutes per side. Remove from heat.

    Mash the avocado in a bowl with the remaining 0.25 tsp salt, the lemon juice, and the remaining black pepper until creamy but still chunky.

    Toast the 2 bread slices until golden and crisp. Spread the avocado mixture evenly over each slice.

    Top with the cooked shrimp, drizzle with the remaining 1 tbsp olive oil, and sprinkle with the parsley. Serve immediately.

    Optional: add a pinch of red pepper flakes or a clove of minced garlic to the shrimp while cooking for extra flavor.
