- ½ lb shrimp, peeled and deveined
- 1 avocado
- 2 bread slices
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh parsley, chopped

Pat the 0.5 lb shrimp dry with paper towels and season with 0.25 tsp salt and a pinch of the black pepper.

Heat 1 tbsp olive oil in a skillet over medium-high. Add the shrimp in a single layer and cook until pink and opaque, about 2-3 minutes per side. Remove from heat.

Mash the avocado in a bowl with the remaining 0.25 tsp salt, the lemon juice, and the remaining black pepper until creamy but still chunky.
