Ingredients
- 2 tbsp fish paste (nam pla or shrimp paste)
- ½ lb shrimp, peeled and deveined
- ¼ cup crispy fried shallots
- 6 oz fresh egg noodles or rice noodles
- 3 cloves garlic, minced
- 4 cups chicken or seafood broth
- 1 bunch fresh cilantro and lime wedges

Heat oil in a pot over medium-high. Add garlic and cook 30 seconds until fragrant.

Stir in fish paste until dissolved, then pour in broth. Bring to a simmer.

Add noodles and shrimp. Simmer 4–5 minutes until shrimp turns opaque and noodles are tender.
