Ingredients

  • 2 tbsp fish paste (nam pla or shrimp paste)
  • ½ lb shrimp, peeled and deveined
  • ¼ cup crispy fried shallots
  • 6 oz fresh egg noodles or rice noodles
  • 3 cloves garlic, minced
  • 4 cups chicken or seafood broth
  • 1 bunch fresh cilantro and lime wedges

Instructions

    Heat oil in a pot over medium-high. Add garlic and cook 30 seconds until fragrant.

    Stir in fish paste until dissolved, then pour in broth. Bring to a simmer.

    Add noodles and shrimp. Simmer 4–5 minutes until shrimp turns opaque and noodles are tender.

    Divide into bowls and top with crispy shallots and fresh cilantro. Serve with lime wedges.
