Ingredients

  • 1 lb large shrimp, peeled & deveined
  • ¾ cup fresh lime juice
  • 1 whole ripe avocado
  • 1 whole jalapeño, minced
  • 1 whole Roma tomato, diced
  • ¼ cup fresh cilantro, chopped
  • 1.5 cups tortilla chips

Instructions

    Cut shrimp in half lengthwise. Add to a bowl with lime juice, salt, and pepper.

    Stir, cover, and refrigerate for 15 minutes until shrimp turns opaque and firm.

    Stir in jalapeño, tomato, and cilantro. Taste and adjust salt and lime juice.

    Slice avocado and arrange on a plate with ceviche, tortilla chips, and a lime wedge.

    Serve immediately.
