Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ¾ cup fresh lime juice
  • 1 whole jalapeño, minced
  • ¼ cup fresh cilantro, chopped
  • ½ whole red onion, thinly sliced
  • 1 pinch salt and black pepper

Instructions

    Cut shrimp in half lengthwise if very large, keeping them roughly bite-sized.

    Add shrimp, lime juice, jalapeño, red onion, and a pinch of salt to a bowl.

    Stir well and refrigerate for 15 minutes. Shrimp will turn pink and opaque.

    Stir in cilantro, taste, and adjust salt and pepper.

    Serve immediately with a slotted spoon or over crackers if desired.
