Ingredients
- 8 oz glass noodles
- 1 lb shrimp, peeled and deveined
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 4 stalks green onions, sliced
- ½ cup fresh cilantro, chopped

Soak the 8 oz glass noodles in warm water for 10 minutes until pliable, then drain and set aside.

Pat the 1 lb shrimp dry and season with a pinch of salt and pepper.

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the shrimp in a single layer and cook until pink and opaque, about 2 minutes per side. Remove to a plate.

Reduce heat to medium, add the remaining 1 tbsp oil and 3 minced garlic cloves. Stir-fry until fragrant, about 30 seconds.

Add the drained noodles, 3 tbsp soy sauce, and 2 tbsp water. Toss constantly until the noodles are tender and coated, about 3 minutes.

Return the shrimp to the skillet, add the sliced green onions and chopped cilantro. Toss everything together for 1 minute until heated through. Serve hot.

Taste and add more soy sauce or a squeeze of lime if you like.
