Shrimp and Broccoli Alfredo Pasta

Ingredients
- 8 oz spaghetti
- ½ lb shrimp
- 2 cups broccoli florets
- 1 cup mushrooms
- 1 cup heavy cream
- ½ cup Parmesan cheese

Cook the 8 oz spaghetti in salted boiling water until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, heat 1 tbsp olive oil in a large skillet over medium-high. Add the 0.5 lb shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.

In the same skillet, add the 2 cups broccoli florets and 1 cup mushrooms. Sauté until tender and lightly browned, about 5-7 minutes.

Pour in the 1 cup heavy cream and bring to a simmer. Stir in the 0.5 cup Parmesan cheese until melted and smooth. Season with salt and pepper.

Add the cooked spaghetti and shrimp back to the skillet. Toss everything together, adding reserved pasta water as needed to loosen the sauce. Serve hot with extra Parmesan if desired.
