Ingredients

  • 1 lb pork shoulder, thinly sliced (⅛-inch thick)
  • 2 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1.5 tbsp mirin or honey
  • 4 cups napa cabbage, sliced into 1-inch ribbons
  • 2 wedges lemon wedges

Instructions

    Whisk ginger, soy sauce, and mirin in a small bowl until combined.

    Heat a large skillet over medium-high until a drop of water flicks and sizzles.

    Working in two batches, sear pork slices 90 seconds per side without moving. Transfer to a plate.

    Return all pork to the skillet and pour in the ginger sauce, tossing to coat evenly.

    Add cabbage and toss until wilted and glazed, about 2 minutes. The sauce should cling to both.
