Ingredients

  • 1 lb lamb shoulder, cut into 1.5-inch chunks
  • 1 large bell pepper (red or yellow), cut into 1-inch pieces
  • ½ large red onion, cut into wedges
  • ¾ cup canned crushed tomato
  • 2 tbsp tomato paste
  • 2 tsp baharat spice blend (or 1 tsp each cumin + paprika + cinnamon)
  • ½ cup greek yogurt
  • 1 whole lemon

Instructions

    Pat lamb dry and toss with baharat, salt, pepper, and 2 tbsp olive oil until coated.

    Spread lamb, peppers, and onions on a sheet pan in a single layer.

    Whisk crushed tomato and tomato paste together, pour over lamb and vegetables.

    Roast at 425°F for 18–20 minutes until lamb is cooked through and edges brown.

    Stir in juice of half the lemon. Serve warm with yogurt and lemon wedges on the side.
