Ingredients
- 1.5 lbs beef sirloin or ribeye, cut into 1-inch cubes
- ½ cup natural peanut butter (or tahini)
- ⅓ cup coconut milk
- 3 tbsp soy sauce
- 1 tbsp ginger, minced
- ½ tsp red chile flakes (or sambal oelek)
- 1 whole lime (juiced)

Thread beef cubes onto metal or wooden skewers (soak wood 10 min first). Arrange on a sheet pan.

Whisk peanut butter, coconut milk, soy sauce, ginger, chile flakes, and lime juice until smooth.

Brush the marinade all over the beef and skewers, reserving 1/4 cup for serving.

Roast at 425°F for 12–14 minutes until beef edges are caramelized and internal temp hits 130°F for medium-rare.
