Ingredients
- 1.25 lb lamb shoulder, cut into 1-inch cubes
- ½ cup creamy peanut butter
- ¼ cup coconut milk
- 3 tbsp soy sauce
- 1 whole lime (juiced)
- 1.5 tbsp brown sugar
- ½ tsp red chili flakes
- 3 whole garlic cloves, minced

Whisk peanut butter, coconut milk, soy sauce, lime juice, sugar, chili flakes, and garlic in a bowl until smooth.

Thread lamb cubes onto metal skewers, spacing them 0.5 inches apart. Arrange on a sheet pan.

Brush lamb generously with half the sauce. Set oven to broil. Broil 8 minutes until edges char and meat is medium-rare.

Flip skewers, brush with remaining sauce, and broil 5 minutes longer until deeply charred and cooked through.
