Ingredients

  • 1.25 lbs mixed vegetables (bell peppers, zucchini, red onion, cherry tomatoes)
  • 1.5 cups cooked grain (rice, quinoa, or farro)
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic, minced

Instructions

    Preheat oven to 425°F. Cut vegetables into bite-sized chunks (about 1-inch).

    Toss vegetables with 2 tbsp olive oil and a pinch of salt and pepper. Spread on a sheet pan.

    Roast for 12–14 minutes, shaking the pan halfway through, until edges char and soften.

    Stir together soy sauce, sesame oil, minced garlic, and remaining 1 tbsp olive oil.

    Warm grains in a bowl or on stovetop if not already warm. Divide between bowls.

    Top grains with roasted vegetables and drizzle with soy-sesame glaze. Serve hot.
