Ingredients
- 1.25 lbs mixed vegetables (bell peppers, zucchini, red onion, cherry tomatoes)
- 1.5 cups cooked grain (rice, quinoa, or farro)
- 3 tbsp olive oil
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 cloves garlic, minced

Preheat oven to 425°F. Cut vegetables into bite-sized chunks (about 1-inch).

Toss vegetables with 2 tbsp olive oil and a pinch of salt and pepper. Spread on a sheet pan.
