Ingredients

  • 2 chops pork chops, boneless (3/4-inch thick)
  • 1 lb small potatoes, halved
  • 4 cups kale, chopped
  • ½ cup apple cider or apple juice
  • 2 tbsp butter
  • 1 whole shallot, minced

Instructions

    Heat 1 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Season pork chops with salt and pepper. Sear 2 minutes per side until golden brown. Transfer to a plate.

    Add potatoes to the same skillet, toss with 1 tbsp oil and salt, then spread in a single layer.

    Slide the pork chops back in between the potatoes. Cook uncovered for 6 minutes, stirring potatoes halfway.

    Scatter kale and minced shallot over everything. Pour apple cider around the pan. Top with butter dots.

    Cook 3 minutes more until kale wilts and potatoes are tender. Scrape pan drippings into a small pitcher as gravy.
