Ingredients
- 2 chops pork chops, boneless (3/4-inch thick)
- 1 lb small potatoes, halved
- 4 cups kale, chopped
- ½ cup apple cider or apple juice
- 2 tbsp butter
- 1 whole shallot, minced

Heat 1 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Season pork chops with salt and pepper. Sear 2 minutes per side until golden brown. Transfer to a plate.

Add potatoes to the same skillet, toss with 1 tbsp oil and salt, then spread in a single layer.

Slide the pork chops back in between the potatoes. Cook uncovered for 6 minutes, stirring potatoes halfway.
