Ingredients

  • 1.5 cups all-purpose flour
  • 6 tbsp butter, room temperature
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp baking powder
  • 1 lb plums, fresh
  • 1 tsp cinnamon

Instructions

  1. 1

Preheat oven to 375°F. Line a sheet pan with parchment paper or lightly grease it.

  2. 2

Cream butter and sugar together until pale and fluffy, about 2 minutes. Add egg and stir until combined.

  3. 3

Whisk flour, baking powder, and a pinch of salt in a separate bowl. Fold dry ingredients into butter mixture until just combined.

  4. 4

Spread batter evenly onto the prepared sheet pan. Halve plums and press them skin-side up into the dough in rows.

  5. 5

Mix cinnamon with 1 tbsp sugar and sprinkle over plums. Bake until golden brown and a toothpick comes out clean, about 15 minutes.

  6. 6

Cool on the pan for 5 minutes, then cut into squares and serve warm or at room temperature.
