Ingredients

  • ¾ lb beef sirloin or ribeye, thinly sliced
  • 2 medium bell peppers (1 red, 1 yellow), sliced into strips
  • 1 large onion, sliced into thin half-moons
  • 6 oz provolone or cheddar cheese, sliced or shredded

Instructions

    Toss beef, peppers, and onion with 2 tbsp oil, salt, and pepper on a sheet pan until evenly coated.

    Spread in a single layer and roast at 425°F for 12 minutes until beef browns and peppers soften.

    Scatter cheese over the top and roast 2 more minutes until melted and bubbly.

    Serve hot straight from the pan with crusty bread on the side if desired.
