Ingredients

  • ½ lb cod fillets, skinless
  • 1.5 cups cherry tomatoes
  • ⅓ cup Kalamata olives, pitted
  • 1 whole lemon
  • 3 tbsp olive oil
  • 2 whole garlic cloves, minced
  • 1 tbsp fresh oregano (or 1 tsp dried)

Instructions

    Heat oven to 400°F. Toss tomatoes and olives with 2 tbsp olive oil, garlic, oregano, salt, and pepper on a sheet pan.

    Roast tomato mixture 5 minutes until tomatoes begin to blister.

    Pat cod dry. Make room in the center, place fillets on the pan, drizzle with 1 tbsp olive oil, season with salt and pepper.

    Roast 10–12 minutes until fish flakes easily with a fork and is opaque throughout.

    Halve the lemon. Squeeze juice over the pan and serve immediately with lemon wedges.
