Ingredients
- 1 lb kielbasa or smoked pork sausage
- 1.5 cups cherry tomatoes
- 1 large red bell pepper, sliced into 1-inch strips
- 2 tbsp olive oil
- 2 tbsp yellow or whole-grain mustard
- 1 pinch salt and pepper to taste

Preheat oven to 425°F. Slice kielbasa on the diagonal into 2-inch pieces.

Spread kielbasa, cherry tomatoes, and bell pepper strips on a sheet pan.

Drizzle with olive oil. Season with salt and pepper. Toss until coated.

Roast for 12 minutes. Shake the pan halfway through. Edges should look golden and blistered.

Remove from oven. Drizzle mustard over the top and toss once to coat.
