Ingredients

  • 2.5 lbs beef short ribs (flanken or galbi cut, 1/4-inch thick)
  • ½ cup soy sauce
  • ⅓ cup brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp sesame seeds (white or black)

Instructions

    Preheat oven to 425°F.

    Whisk soy sauce, brown sugar, garlic, and ginger in a bowl until sugar dissolves.

    Arrange short ribs on a sheet pan in a single layer, bone-side down.

    Pour marinade over ribs. Toss to coat evenly.

    Roast 30 minutes, stirring and rotating pan halfway through, until ribs are deeply caramelized.

    Remove from oven and sprinkle sesame seeds over hot ribs.

    Serve immediately with rice and kimchi.
