Ingredients

  • 1 lb boneless chicken thighs
  • 3 tbsp olive oil
  • 1 whole lemon (juiced)
  • 1 tbsp dried oregano
  • ½ tsp each salt and pepper
  • 4 pieces pita bread
  • 1 set tzatziki, tomato, red onion (for serving)

Instructions

    Pat chicken thighs dry. Toss with olive oil, lemon juice, oregano, salt, and pepper.

    Spread chicken on a sheet pan in a single layer. Roast at 425°F for 16–18 minutes.

    Chicken is done when edges are deep golden and the thickest piece reaches 165°F.

    Warm pita bread in the oven for 1–2 minutes or in a dry skillet over medium heat.

    Slice or shred roasted chicken. Divide among pita with tzatziki, tomato, and onion.

    Serve immediately while pita and chicken are still warm.
