Ingredients

  • 1.25 lb chicken breast, sliced into strips
  • 2 whole bell peppers (red, yellow, or orange), sliced into 1-inch strips
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups kale, roughly chopped

Instructions

    Toss chicken and peppers with oil, salt, and pepper on a sheet pan.

    Roast at 425°F until chicken is cooked through, ~15 minutes.

    Warm black beans in a small pot over medium heat, ~4 minutes.

    Toss kale with oil and a pinch of salt, spread on a second sheet pan.
