Ingredients
- 8 sheets phyllo dough sheets
- 4 cups fresh spinach, chopped
- ¾ cup feta cheese, crumbled
- 2 large eggs
- ½ medium onion, finely diced
- 6 tbsp olive oil
- 1 whole lemon, zested and juiced

Heat 2 tbsp olive oil in a skillet over medium. Sauté diced onion until softened, ~3 minutes.

Add spinach and cook until wilted and any liquid evaporates, ~2 minutes. Transfer to a bowl.

Stir feta, eggs, lemon zest, and lemon juice into the spinach mixture. Season with salt and pepper.

Brush a sheet pan with 1 tbsp olive oil. Layer 4 phyllo sheets on top, brushing each with oil.

Spread spinach-feta filling evenly over phyllo. Top with remaining 4 phyllo sheets, brushing each with oil.
