Ingredients

  • 1 lb okra, fresh
  • 1.5 cups cherry tomatoes
  • 4 clove garlic cloves, minced
  • 4 tbsp olive oil
  • 1 whole lemon
  • ¾ tsp dried oregano

Instructions

    Preheat oven to 450°F. Trim the stem ends from okra, leaving pods intact.

    Toss okra, tomatoes, garlic, olive oil, oregano, salt, and pepper on a sheet pan.

    Spread in a single layer. Roast for 15 minutes, shaking the pan halfway through.

    Okra should be golden and tender; tomatoes should be blistered and soft.

    Squeeze lemon juice over the top and taste for salt. Serve warm or at room temperature.
