Sesame Ginger Soba with Edamame

Ingredients

  • 8 oz soba noodles
  • 1 cup frozen edamame
  • 3 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce

Instructions

    Boil water in a pot. Add soba noodles and cook until just tender, about 4 minutes.

    Add frozen edamame to the pot in the last minute of cooking. Drain and rinse with cold water.

    Whisk sesame oil, ginger, rice vinegar, and soy sauce in a bowl until combined.

    Toss the cooled noodles and edamame with the dressing until evenly coated.
