Ingredients

  • 8 oz soba noodles
  • 2 tbsp minced fresh ginger
  • 2 clove garlic cloves, minced
  • 3 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 medium carrots, julienned or thinly shredded

Instructions

    Boil soba in salted water until just tender, about 4 minutes. Drain and rinse under cold water until cool.

    Whisk together sesame oil, soy sauce, minced ginger, and minced garlic in a large bowl.

    Add cooled noodles and shredded carrots to the dressing. Toss until every strand is coated.
