Ingredients

  • 1.5 cups glutinous rice flour (sweet rice flour)
  • ¾ cup hot water
  • ¾ cup red bean paste (sweetened canned)
  • ½ cup white sesame seeds
  • 2 cups neutral oil for deep frying
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons water for dough

Instructions

    Pour hot water into glutinous rice flour, salt, and sugar. Stir with a fork until shaggy.

    Add 2 tablespoons water if dough is crumbly. Knead for 2 minutes until smooth and pliable.

    Cover dough with plastic wrap and rest for 10 minutes.

    Divide dough into 8 equal pieces. Roll each into a ball, then flatten into a 3-inch disk.

    Place 1.5 tablespoons red bean paste in the center of each disk. Fold edges up and seal.

    Roll sealed ball between your palms until smooth. Press lightly into sesame seeds to coat.

    Arrange coated balls on a parchment-lined tray. Let sit for 5 minutes before frying.

    Heat oil in a heavy pot to 320°F (160°C). Use a thermometer—temperature is critical.

    Carefully slide 3–4 balls into oil. They will sink, then float within 30 seconds.

    Fry for 5–6 minutes, turning occasionally with a slotted spoon, until deep golden brown.

    Lift balls out with a slotted spoon and drain on a paper-towel-lined plate.

    Repeat with remaining batches. Serve warm or at room temperature.
