Ingredients
- 1.5 lbs firm white fish fillets (cod, halibut, or snapper)
- 1 can (14.5 oz) canned crushed tomatoes
- 3 medium carrots, sliced 1/2-inch thick
- 1 lb red potatoes, cut into 1-inch cubes
- 1.5 cups fish stock or water
- 2 tbsp tomato paste

Heat olive oil in a large skillet over medium-high. Add diced garlic and 1 diced onion, stirring until fragrant, about 90 seconds.
