Ingredients

  • 1.5 lbs firm white fish fillets (cod, halibut, or snapper)
  • 1 can (14.5 oz) canned crushed tomatoes
  • 3 medium carrots, sliced 1/2-inch thick
  • 1 lb red potatoes, cut into 1-inch cubes
  • 1.5 cups fish stock or water
  • 2 tbsp tomato paste

Instructions

    Heat olive oil in a large skillet over medium-high. Add diced garlic and 1 diced onion, stirring until fragrant, about 90 seconds.

    Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, stock, carrots, and potatoes; season with salt and pepper.

    Bring to a boil, then reduce heat to medium. Simmer uncovered until potatoes are almost tender, about 8 minutes.

    Nestle fish fillets into the sauce, spooning some liquid over them. Simmer gently until fish flakes easily, 4–5 minutes.
